winemaker's notes

The grapes for the 2001 Cabernet Sauvignon came from vines planted at Chalk Hill in 1969. These vines are now reaching their prime production phase. The grapes were picked on 4 April at a of 15 degrees Baumé, yielding a resultant alcohol of 14.6%. They spent six days fermenting in open fermenters to optimise the grape flavours, and the wine then matured for 18 months in French oak barriques. The nose of the wine displays lively hints of mint, lemon, lime and lavender, and the palate is a mix of blueberry, blackberry and cassis. The finish is long and gradually drying.
